Top Tsogo Sun chefs prove Christmas can never come too soon

A bit of Christmas cheer at any time of the year certainly can’t hurt, and Tsogo Sun spread just that with its chefs’ culinary prowess this July.

The hotel chain’s Christmas in July tasting menu, held at Punchinello’s at Southern Sun Montecasino, comprised festive dishes by eight top chefs from Tsogo Sun’s leading restaurants.

The eight-dish menu was prepared by chefs Kenneth Ngubane, Ruben Daniels, Deena Naidoo, Mathew Foxon, Sandi Richmond, Gareth Jordaan, Clinton Bonhomme and Prenolan Naidoo.

To set the tone, Ruben Daniels of Back O’ the Moon at Gold Reef City served up watermelon and goat’s cheese salad with gingerbread-spiced yoghurt and trimmings as a first starter. The second starter, by Deena Naidoo of Aarya at Montecasino & Silverstar, was cod on mint and coriander puree with crayfish kedgeree quenelle.

One of the four much-anticipated mains was the pistachio and cranberry chicken roulade by Sandi Richmond of The Sugar Club at The Beverly Hills. For the finale, Clinton Bonhomie of Lingela at Southern Sun Elangeni & Maharani went all out with an assortment of sweet “bites of festive flare”.

Delicious wines were the perfect accompaniment to the dishes, and included Haute Cabrière Pinot Noir, De Grendel Sauvignon Blanc, Tokara Cabernet Sauvignon and Graham Beck Brut Rose.
